Baking and Pastry Certificate Program provides broad based knowledge and skills 

The Baking and Pastry Certificate Program is an intensive ten month program with classes taking place Monday Through Friday. Morning classes are from 7:00am until 12:00pm, and afternoon classes are from 12:30pm until 5:30pm. This program includes four months of externship covering beginning and advanced yeast-based artisan bread and rolls, pastry doughs and batters, breakfast pastries, quick breads, filled and assembly cakes and torts, wedding cakes, cookies, custards, creams, mousses and soufflés, icing, glazes and sauces, frozen desserts, pies, tarts and fruit desserts.

To earn their certification, for their final exam students are required to create a complex plated dessert menu. Working individually and as a team, students have two weeks to plan and experiment in the kitchen, ultimately creating three complex, world-class desserts that will be professionally evaluated. This intensive and comprehensive system has been described by students as an inspiring and practical experience, giving them the skills to step confidently into their culinary career.

Externship Program

California Culinary Arts Institute candidates are required to finish their Externship program to receive their certificates. California Culinary Arts Institute has provided an extensive Externship program for culinary students who have passed their four months certificate culinary program and for students who have passed their six months certificate baking and pastry program.

The externship program is five days a week; The A.M. externship is from 9:00am until 2:00pm and the P.M. externship is from 2:00pm until 7:00pm.

The Externship program is fulfilled at the California Culinary Arts restaurant, and is designed to enable student have real work experience in restaurants.

California Culinary Arts restaurant is a none-profit and be donating all its profit from the restaurant to the Father Joe’s Village and Animal Shelter Organizations located in San Diego.

Course Details

10 Students in each class
Morning Class – 7:00 am to 12:00 pm
Afternoon Class – 12:15pm to 5:15 pm

Classes take place for 5 hours daily, Monday thru Friday.
40 Weeks, 1000 Hours which includes 400 hours Externship
