Culinary Certificate Program
Culinary Certificate Program offers wide spectrum expertise and training
The Culinary Certificate Program is an intensive eight month program with classes taking place Monday Through Friday. Morning classes are from 7:00am until 12:00pm, and afternoon classes are from 12:30pm until 5:30pm. This program also includes four months of externship covering essential culinary themes and professional skills for preparing breakfasts, lunches and dinners. Nutritional awareness and all necessary kitchen skills are applied to mastering a full spectrum of stocks, sauces, soups, starch cookery, meat and seafood cookery, vegetarian menus, salads—with recipes drawn from domestic and international cuisine.
To groom students for quick advancement in their culinary career, our institute prepares students for the most intensive and comprehensive practical exam of any culinary school. The test prep and final exam is comprised of two weeks of meal and menu planning and in-the-kitchen experimentation, culminating in a team effort to create a seven course tasting menu, submitted for professional evaluation.This challenging and inspiring process has continually been praised by students as the highlight of their learning experience and a key stepping stone for culinary industry success.
California Culinary Arts Institute candidates are required to finish their Externship program to receive their certificates. California Culinary Arts Institute has provided an extensive Externship program for culinary students who have passed their four months certificate culinary program and for students who have passed their six months certificate baking and pastry program.
The externship program is five days a week; The A.M. externship is from 9:00am until 2:00pm and the P.M. externship is from 2:00pm until 7:00pm.
The Externship program is fulfilled at the California Culinary Arts restaurant, and is designed to enable student have real work experience in restaurants.
California Culinary Arts restaurant is a none-profit and be donating all its profit from the restaurant to the Father Joe’s Village and Animal Shelter Organizations located in San Diego.

10 Students in each class
Morning Class – 7:00 am to 12:00 pm
Afternoon Class– 12:15pm to 5:15 pm
Classes take place for 5 hours daily, Monday thru Friday.
This program is 32 Weeks (800 Hours total), which includes 400 hours of an Externship
